History of Ternhaven Cellars
Henry Watts, the creator of Ternhaven Cellars, used to teach economics in prestigious institutions such as Columbia University and Yale. He began his career in winemaking right out of his Manhattan garage and was fondly known as the Greenport Garagiste. The French term is used to describe winemakers in Bordeaux operating in a small to moderate scale.
At present, they have two tasting rooms and several restaurants to allow more people to enjoy the fruits of his labor. Averaging 1,000 cases every year, Ternhaven Cellars is known for not releasing any wines from its oak cask housings until they have reached the right age.
How Wines of Ternhaven Cellars are Produced
To produce his much-celebrated wines, Henry Watts made sure to follow traditional winemaking techniques. Firstly, wines are allowed to ferment inside unclosed tanks. Afterwards, the wines are transferred to steel tanks and shut inside for the second stage of fermentation. Lastly, they are then allowed to age inside oak casks. None of the wines are filtered or cold stabilized so as their fragrant aroma and lovely texture is retained.

Macari Vineyards and Winery is a scenic spot of more than 300 acres of rich land in Mattituck on the North Fork of Eastern Long Island. It is a family-owned and operated enterprise led by Joseph Macari Sr. His son, Joseph Jr. controls the new winery.
Although the Macaris have owned property in the North Fork area, it was only in 1994 when they purchased an area they found suitable for growing grapes, largely through organic farming. The winery was opened in 1998 with a 180-acre vineyard and a building designed by architect Carol DiCicco-Vinci, who has designed several restaurants in New York.
Planting & Operations Macari Vineyards is one of the largest on Long Island. They are the only winemaker in Long Island who plant over-grafted vines successfully, growing a new variety of grapes from the rootstock of another plant. This is done by splicing a new vine to a full-grown root, instead of planting a new plant directly. Their varietals include Merlot, Chardonnay, Cabernet Sauvignon, Cabernet Franc, Pinot Noir, Malbec, Viognier, Savignon Blanc and Syrah.
Harvest time is in the fall and lasts about a month. After the harvest, grapes are processed through cold-stabilization and bottled. Macari has an hourly capacity of 2,500-bottles.
True to their choice to use organic farming methods, Macari Vineyards maintains their own compost system which is integrated into their farming process. They use this natural fertilizer to maintain their soil, decreasing their need for pesticides and chemical fertilizers and encouraging a friendly environment for wildlife as well.
Tasting Room
Macari’s tasting room is open to the public daily from 11 a.m. to 5 p.m., although the winery itself is open all year round. It is housed in an elegant building with vaulted ceilings and an interior finished in pale earth tones, marble, metal and wood fixtures. The tasting room provides a great view of the vineyards.
Macari has taken some efforts to display their wine more attractively, opting to display wine bottles arranged in small tables, instead of stacking them in large cases. This arrangement allows visitors more space to move around and check the wines, without overwhelming them with the selection.
One of their signature wines is Bergen Road, a popular east coast red. Along with Bergen, there’s their 2003 100% Cabernet Franc red, perfect for pairing with cheese, chicken or pork. A late harvest wine is Block E, a fruity but not too sweet blend of honey, apple, apricot and melon. A noteworthy white is the 2003 Sauvignon Blanc.
Event Hosting
Macari Vineyards hosts private parties and corporate events only one at a time, ensuring guests enough privacy and full attention of its staff. It’s quite popular for weddings because of its panoramic view where events can either end or begin with a spectacular sunset. Tours are available by appointment only.

From New York, take the LIE to exit 71 at Edwards Avenue and turn left towards north to Sound Avenue. At Route 48, turn right to head east. Macari vineyards will be on the left at the corners of Bergen and Sound Avenue.
Martha Clara used to be a pastry sales girl at the time she and her husband met. The family made it through the depression by selling their delicious pastries and decorated cakes. After her husband died of a heart attack, Martha focused on supporting her sons while improving the fate of their bakery.
When his mother passed away, Robert Entenmann decided to move on to greener pastures. He initially thought of a potato farm, but noticing that the area around Long Island is already filled of grape plantations, he decided to try his luck in the vineyard business instead.
In 1995, Robert Entenmann planted around 18 acres of vinifera grapes in his vineyard. While anxiously waiting for these grapes to come to ripen, Robert acquired more land. His vineyard acreage eventually grew from 18 to 112 acres.
Martha Clara Vineyard’s first release was in 1999. It was a Viognier made from the Sagpond Vineyards by a certain Roman Roth of Wolffer Estate. By the summer of 2000, Robert started releasing more varieties of wine, including Riesling, Gewurztraminer and Semillon. Though these wines were received quiet favorably, they’re not really what you might label as the best in their line..
The next year, sales started improving followed by the release of a more delicious variety. These arrivals consist of the Sauvignon Blanc, Reserve Chardonnay and a new blend called Glaciers End. Jamesport Vineyards is yet another vineyard that’s part of Long Island Wine Country, they are producers of award-winning wines. These vineyards were planted by the Goerler family back in 1981. That makes Jamesport Vineyards the oldest vineyard in the North Fork area.
Jamesport Vineyards has a total land area of about 60 acres, of which 48 acres have been planted. It also has an enlarged wine tasting room and a grassy backyard for large gatherings.
Though the barn is already more than 150 years old, Jamesport successfully integrated the secrets of wine making from the old world with contemporary techniques and technologies. These wines are being produced and bottled under strict supervision of the estate which assures us consumers of the highest quality possible.
The vineyard was planted a century and a half ago, but the winery itself was just established in 1986.
